Chanukah Latkes

2 large potatoes, shredded
2 eggs
1/2 tsp. salt
dash of black pepper
sprinkle of cinnamon
1/2 cup flour
1/4 tsp. baking powder

1. Mix all together.
2. Fry in 1/2 inch deep canola oil, turning only once.
3. Drain well on paper towels.
4. To keep crisp until serving, place in warm oven on rack (not in pan).

Serve with sour cream.  Makes about 12 latkes.
